pandoc: disable treesitter for markdown

- Disables treesitter for markdown to avoid conflicts with vim-pandoc*
  plugins.
- Sets the folding level to 2 for pandoc filetypes.
- Moves to a nord light theme.
- Fixes the treesitter configuration.
